This is our Santoku knife, hand-forged in Somerset by Joe Garnett. 

HANDLE: Octagonal handle made out of waste plastic which we will go out and find. This waste source is always changing depending on what we collect, so there can be variations in colour. The handle isn't perfect, it's rubbish.

SHAPE: Santoku 
This is the Japanese version of a Western chef's knife. This is your all-rounder kitchen knife. Santoku translates as “three benefits” and relates to the knife's ability to slice, dice and mince.

STEEL: 52100 (British)
This is an incredibly sharp high carbon steel. It has great rust resistance and holds an edge well. 

HRC: 62
